Fantastic Fruitcake Cookies

The perfect cookie to prepare and bake with your childern or grandchildren.

I was skeptical when my husband first made these cookies with my stepchildren. I mean … fruitcake anything? But Wow! This recipe is absolutely delicious and so easy to prepare!

I will definitely include this recipe in Book Two in the Inspiration in Misty Valley series.

Ingredients

  • 1 cup all purpose four
  • 1 lb. Paradise Extra Fancy Fruit Cake (Sweetened Real Fruit)
  • 1 cup Bakers Coconut Flakes
  • 1 cup chopped Pecans
  • 14 oz. can of sweetened condensed milk (full fat)

Instructions

  1. Adjust oven racks to upper-middle and lower-middle positions and preheat oven to 360 degrees.
  2. Line two sheet pans with silicone baking mats, to prevent cookies from sticking, and set aside.
  3. Place flour in large bowl and add and mix the sweetened fruit until coated.
  4. Add coconut flakes, chopped pecans, and mix well.
  5. Add sweetened condensed milk and mix well.
  6. Drop tablespoons of batter on sheets in 4 by 3 rows. (12 cookies per sheet.)
  7. Bake for 30 minutes or until cookies are a golden brown color, switching sheets halfway through cooking time. (I prefer undercooked cookies.) 🙂
  8. Place baked cookies on racks to cool and store in airtight containers.

This recipe makes 24 delicious cookies, and your little ones can lick the spoon or eat the batter, safely.
